Last night was kind of a bust. I had class til 8 and Leah was sick, so we just had leftovers for dinner. Pop ate all the meat and potatoes out of the beef burgandy (there wasn't much left to begin with), so I basically had noodles and gravy.
On Friday, we had Fish Tacos. It was a compromise of sorts: Leah wanted fish and I wanted something more like Mexican food. We went to Central Market and got a big cod fillet (that ended up having to be deboned and cut into 3 pieces), cabbage, tomatoes and avocado. To make the fish, I just sprayed some Pam in a frying pan and put two of the fillets on (the other one we froze so Pop could use it for the cioppino he wants to make). I seasoned with a mix of ground cumin, chile powder and salt, then added some fresh lime juice at the end. It only took a few minutes on each side to cook.
Meanwhile, Leah sliced up the cabbage and added a touch of cider vinegar, lime juice and salt and chopped up the tomatoes and avocado while I made some low-fat Uncle Dan's ranch dip as a sauce (used non-fat sour-cream, half the mayo and a little milk) and made spanish rice from a box, omitting the margarine. To serve, we put a little bit of the cabbage on some warm tortillas, then a little fish and let everyone add their own veggies and salsa. It was a success! Even Pop liked it.
