Saturday night we had grilled salmon, edamame (soybeans in the pod) and roasted sweet potatoes and new potatoes. I hurt my shoulder somehow so Leah did most of the work. We had gone to Costco Friday after work and got a bunch of salmon, halibut and boneless skinless chicken breasts. We portioned the meat into 4 ounce pieces and individually wrapped them and put them into the freezer to use for future meals. It makes coming up with dinner a lot easier.

So, we saved out some of the salmon for dinner and Leah marinated it while we did all the portioning. She cut up a sweet potato and some new potatoes and sprayed them with Pam and seasoned with the chicken rub we have. She roasted them in the oven for 30 minutes and then grilled the salmon on the BBQ for the last 15 minutes. I boiled the edamame in salted water for 2-3 minutes and they were done.

Here's the marinade for the salmon:
2 tbsp soy sauce
1/2 tsp sesame oil
2 tsp balsamic vinegar
1/2 tsp ginger paste
1/4 tsp wasabi paste
pinch "chicken rub" seasoning (or use brown sugar, salt and pepper)
