Tuesday night wasn't that great either. Nobody felt like cooking. I forgot to mention the other goal of mine besides meals that are healthy is meals that are quick and easy to make. Dinnertime for us is the worst...you have to think of what sounds good to have, do we have the things at home to make it, go to the store and get stuff to make it, go back home and actually make it and then clean up. It's a constant battle to answer the "What's for dinner?" question in our house. And we can't ask Pop because he always wants something bad like Skipper's, Old Country Buffet, or fried chicken with potato salad. He just doesn't get the whole dieting thing, no matter how many times we explain why we can't eat food like that.

So, last night on the way home we were racking our brains to figure out what to make. I knew we'd have to go to the store anyways, but we did have stuff for salad at home already. So, pasta and salad with grilled chicken sounded pretty good. We got roasted chicken and garlic ravioli (less fat than cheese ravioli), roasted garlic and herb pasta sauce and a couple of free-range boneless, skinless chicken breasts (which Pop hates, but we like!).

I pounded out one of the breasts and grilled it in a pan that I sprayed with Pam and seasoned it with my special mix of ground cumin, chile powder and salt. While that was cooking, I cooked up the ravioli and cut up some tomatoes and a little bit of feta for the salad. I tossed the salad mix with some homemade vinaigrette that Leah made up last weekend when we had Avgolemono Soup and salad for dinner. I took the chicken out of the pan and cut it into slices to put on top of the salad and heated up some pasta sauce in the same pan. Then I tossed the ravioli in the sauce, plated it up with the salad and it was done. It wasn't bad, but it wasn't anything great. And I forgot to put away the leftovers.
