I made Avgolemono Soup and salad w/ grilled chicken. We brought home Skipper's for Pop and he seemed pretty happy. I love making avgolemono because it is so easy and only takes as long to make as the rice takes to cook, which is about 20 minutes or so. We also got a new lowfat bleu cheese salad dressing that was actually pretty good, Wishbone brand Just 2 Good!.

We finally used up the last of the tri-tip from Costco. I made it into a beef stir-fry w/ oranges and green beans, based off a recipe from the Tyler Florence cookbook. Not exactly the lowest fat content we've ever had, but considering the original recipe called for 3 cups of oil and we only used about 2 tablespoons, it was not bad. First, I had to thinly slice the meat, against the grain. It suggested doing this while the meat was still partially frozen and I have to admit, that actually works. It's really easy to get thin slices that way. Then I had to make a marinade of an egg white, a little sesame oil, soy sauce, chinese 5-spice (I used garam masala, which was a little less strong, if you know what I mean), cornstarch and some salt and pepper. This I let marinate for 30 minutes in the fridge. Then I had to make some rice and cut up all the green beans and orange segments. I stir-fried the meat in about 2 tbsp of vegetable oil for a couple of minutes, just enough to get it a little crispy. Obviously, I couldn't deep-fry it like the recipe called for, but it didn't turn out bad, so that's fine. Then I removed the meat and added some garlic, ginger, red pepper flakes and sliced scallions to the oil and then added the green beans. Then I had to cook the green beans in a sauce for about 10 minutes, until they were cooked and the sauce was thick. It consisted of chicken stick, soy sauce, chinese black vinegar (or balsamic, which is what I used), suagr and cornstarch. Then I added the orange segments and sprinkled some toatsted sesame seeds on top. Leah made sauteed snow-peas with sesame seeds as a side dish.
