I haven't been keeping up with this lately....too much personal stuff and school going on. Now, class is over and I just have my paper to finish, so things should be more on track this month.
Saturday
We were going to have steamed halibut for dinner, but got home from the store and realized that we were out of halibut and only had salmon. We hadn't eaten much that day, so we decided to get takeout from Suni's. Leah and I got the gyros (she had chicken, I had beef) and made our own tzatziki out of non-fat yogurt, cucumber and garlic. We also got the greek salad, with the dressing on the side. I just drizzled a little bit of the dressing on top, since it had some meat and a little feta and olives already, it didn't need much at all. Leah made a dressing from some flax seed oil that she is taking. It's supposed to be the kind that helps to burn more fat from the body.
Sunday
We got some halibut from Central Market and I made it the way I had seen someone do it on TV, steamed over orange slices. First, I just seasoned the fillets with a little salt and pepper. I had earlier brewed some oolong tea and set that to boiling in my wok. I sliced up an orange and added a couple of slices to the tea. Then I layered the bottom of my bamboo steamer with the rest of the orange slices and placed the fish filets skin side down on top of the oranges. Then I covered and let steam over the wok for about 8 minutes, since they were kind of thick fillets. I also made brown basmati rice and sauteed some spring onions in a little butter. Leah cooked up some braising greens with garlic, lemon juice and a little chicken stock. The fish turned out pretty good, very subtle flavor....I would probably try steaming the fillets skin side up next time to absorb more of the tea and orange flavor, but it was still really good. And because I used real butter, the onions turned out awesome! And that was the only fat in the whole meal, anyways, so I didn't feel bad about it.
Monday
Last night I had my last class and Leah said she didn't feel like cooking after having to run some errands, so we just had frozen dinners. She did steam some broccoli rabe with a little balsamic vinegar and it was really good.
