Last night before dinner we finally weighed, divided and individually wrapped all the halibut fillets and chicken breasts we got at Costco on Sunday. We had to do it before they went bad and we wasted $25 worth of meat. We also, miracle of all miracles, went to the grocery store and left with a single bag of groceries and a bill of only $21 and change. Because we only got what we needed and didn't splurge on junk. Amazing how that works... We actually went to get real parmesan cheese and some zucchini to go with dinner, but they had red spring onions, so of course I had to get some to have with dinner tonight. And I also needed to get a new dessert (fat-free frozen yogurt) and some stuff for lunches this week.
Leah came up with the idea and cooked dinner last night. She made a low-fat version of chicken parmesan, which I have to say, I liked as much as the full-fat version. She baked some seasoned chicken breasts in the oven for a bit and then poured pasta sauce over them and baked them for while longer, then put just a bit of shaved parmesan cheese on top and let that melt. Meanwhile, she made some spaghetti and sauteed zucchini and squash with cumin. I dished up some salad and made a vinagrette out of flaxseed oil, dijon mustard, ponzu sauce, citrus vinegar and some lime juice. All in all, it was a nice dinner and very filling, actually. I didn't care much for the squash, as it was from frozen and so it got too mushy when she cooked it, but I was full anyways, so I gave the rest of mine to the dogs, who loved it.
