Ok, here's another backlog of entries. I was busy this weekend, finishing my final paper for class, which was due on Monday. I finished it at about 9 pm Monday night. It ended up being 10 pages of actual writing and 19 pages total, including abstract, references, figures and tables. Now I'm done and I have the summer off!



Spring onions


Saturday
We had our first grilled meal of the BBQ season. I mean, we'd grilled salmon a few times this spring, but we actually cooked almost everything on the grill this time. We had:

- chicken breasts, marinated in lemon juice and spices
- shrimp, marinated in soy sauce, lime juice and spices
- spring onions, grilled and then finished off with a little butter in a saute pan
- corn, tomato and avocado salad with a little salt, pepper and citrus vinagrette

Everything turned out really good, and Pop even complimented the corn salad! Leah made sorbet for dessert, using our new ice-cream maker. She used fresh-squeezed orange juice (which she squeezed by hand!) and whole and pureed raspberries. She added a little honey and lime juice to sweeten the orange juice and also added about a half cup of fat free half-and-half to thicken it up a bit, or make it more creamy, I'm not sure which. In any case, it was delicious and refreshing after a hot day spent doing yardwork.

Sunday
Ah yes, the stress of dieting, living with Pop, finishing a paper, running errands, etc. took its toll on us on Sunday. Leah caved to my demands for something "bad" for dinner, since we had eaten a total of 500 calories each the whole day anyways. So, we got pizza from Papa Murphy's, take-and-bake, and had some wholewheat, roasted garlic bread with it. We got the veggie pizza, and added pepperoni on half and artichoke hearts. It was not bad and only cost $11. By not bad, I mean it wasn't any worse than delivery pizza.

Monday
So, one of the many things we did on Sunday was go to Costco and stock up on some more staple-like items. We usually get chicken and fish and then spilt them up into 4 ounce individual servings (this is when the electronic kitchen scale comes in handy) and wrap and freeze them for easy thawing. It saves us time and money over the long run because we have to go to the store far less frequently for dinner items, which is when we end up buying a bunch of junk. We did get chicken and halibut, the usual fare, but also some tilapia filets because they were such a good deal. The filets are small, only about 1.5 - 2 ounces each, but very mild, with no fishy smell or flavor at all. Leah dipped them in Egg Beaters, then dipped them in bread crumbs and placed them in the on a baking sheet sprayed with Pam and baked them in the oven for about 10 minutes. They were really very good, better than I thought, and moist and tender. I didn't even need to use the horseradish-sour cream sauce she made to go with it. We also had green beans and couscous as side dishes. I also had the rest of my Kozy-Shack chocolate pudding for dessert as I was finishing up my paper.

Tuesday
Last night we both ended up working late, so Pop suggested having Subway again. We had the same sandwiches as last week, but with a little light (as in low cal) mayo and we each added a slice of turkey breast to our sandwiches at home. We also had a green sald with cherry tomatoes and flax seed oil vinagrette. We had nothing to have for dessert, so I made myself a rice cake with peanut butter.
